We also set our Manuka honey, so the appearance is thicker. This delays the natural sugar granulation which occurs frequently in runny Manuka honey. Methylglyoxal is the active compound directly responsible for the antibacterial activity unique to Manuka honey. The higher the Methylglyoxal content of MGO Manuka Honey, the stronger the antibacterial activity. This new way of rating Manuka honey activity levels is in line with New Zealand Government guidelines and replaces the old 5+,10+,15+,20+ rating systems.
